Low Carb Sweet Potato Casserole

Fall is Coming, even here in the South we can feel a change in the air. Its actually raining and quite humid out there, but you can tell. One of my favorite fall desserts is Sweet Potato casserole, even as a side dish during the fall Holidays this is one of my favorites. I had to do a little research to get this Fall Favorite to fit into my new way of Loving My Food. I believe I’ve accomplished just that. I hope you guys will enjoy this Wonderful little Dessert/ Side Dish. Please keep in mind this is NOT Induction friendly if your on Atkins or just starting out to Loose Weight. Please limit to Portion size of about 1/2 cup. I hope you guys will enjoy this Wonderful little Dessert/ Side Dish.  🙂

What you’ll need

4 Cup Peeled, Diced and Boiled Sweet Potatos

2 Tablespoons Sugar Substitute

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1/2 Teaspoon Salt

2 Tablespoon Imitation Maple Flavoring

3 Tablespoons Coconut Oil

4 Tablespoons Real Butter Unsalted

1/4 Cup Almond Milk Unsweetened

The Crumble Topping

1 Cup Chopped Pecans or Walnuts

2 Tablespoons Imitation Maple Flavoring

 3 Tablespoons Almond Flour

3 Tablespoons Melted Real Butter Unsalted

 

OK! Lets Get Started!

First lets Peel and Dice our Sweet Potatoes and get them Boiling.

Once these are Diced, rinse well and Boil in water until Fork Tender. 

While that is cooking, preheat oven to 350. 

Lets Get the Topping Started.

Blend your Pecans to Crumble stage. Place in Small bowl the Add Almond Flour, Add Imitation Flavoring to soften butter and pour over mixture and mix well. And just set aside until the end.

Next lets Drain those Fork Tender Sweet Potato Cubes. Then Place in Mixing bowl and Mix.

Mix half way then add your ingredients one by one and keep mixing, until mixture is mixed very well! 

Ready your Pan!

20150928_164242This is a typical Loaf pan about 9 + 5. Greased with Butter.

Pour Ingredients in your Prepared Pan and Add your topping.

Place in Oven and Cook for about 30 minutes.

Let Cool and Enjoy! 

I love this dish Warm or Cold. I sometimes leave it in the fridge overnight and slice into bar size, the perfect portion.

McCindy’s LCHF Breakfast Burrito

A year ago one of my favorite Breakfast to grab was a McDonald’s Burrito, I got really hung up on them for a long time. Every time I was out and about during Breakfast hours, a cup of coffee and a Burrito was the choice of this SuperMom before I headed home.

Today, I am a Proud Low Carb Chic. so coming up with a great idea for Breakfast makes me do a Happy Dance!

Ingredients 

1 Egg

3 Slices of Bacon (or Sausage).

Cheese your choice I used Sharp Cheddar 

Salt and Pepper

 

Step 1 

Cook your Bacon or sausage and set aside.

Next heat small pan with a tablespoon of Bacon grease or Oil on med. high heat. Beat Egg.

Pour HALF of egg in bottom of pan, it will be THIN, when done on one side flip for just a second on the other.

Set aside on plate and Top with Bacon and Cheese.

Cook the Remainder Egg the same as the first. Then sit on Top of cheese and top that with Warm Salsa.

Now the Roll! Start at one end and gently roll, it will hold together just be alittle gentle 🙂

It holds together really well, top with more Cheese or Salsa if you like, ENJOY!

Why LCHF?

After all the Diets and Weight Loss programs I have tried, and failed. Not from not loosing weight, but failed as to not seeing the full effects of Better Health and Feeling of Success in weight loss. All ended in Gaining back All or Part of my weight back and giving up.

But Do to the Health issues I had, I needed to find something that was RIGHT, so what was it. I researched Low Carb and from all the testimonials I’ve read and the results I have heard from the Low Carb lifestyle, I thought I would give this one a fare chance as well.

As I have told you before in previous Post, I was in poor Health, But the big picture was much worse than previously described. Symptoms:

*Fatigue

*Muscle Aches

*Female issues (Hormonal, and Fibroid s)

*Arthritis

*High Blood Pressure

*Pre-Diabetic

*Not sleeping through the night

*Severe Acid Re-flux

 

Going to the Doctor I was diagnosed with Onset  of diabetes, Fibromyalgia, beginning of Rheumatoid Arthritis, One Doctor even told me I may have Lupus. Lupus, OMG I was falling apart. The list goes on and on, not to mention they tested my Thyroid every time I had an issue. So I tried to take the medication I ws prescibed, tried to do what I was told and still No Relief. 

That being said, I decided to just take one step at a time and start with helping the Pre Diabetes to STOP. So I took it upon myself to change my eating, Low Carb. I had no Idea, that after starting this program in May of this year that I would be were I am now. Today, I have No symptoms of any of the above problems. I do still take my Blood Pressure medications, that my friends is alot better as well. hopefully in a few more months I can resolve that as well. 

I really believe being a YO YO dieter is the cause of alot of my formal Health issues with my Metabolism. This lead me to research Metabolic Syndrome.

Metabolic Syndrome

Many people do not realize that they are insulin deficient and may have Metabolic Syndrome, changing your diet and sticking to it may change everything, What is Metabolic Syndrome, well the definition is simple:

Metabolic syndrome is a cluster of conditions — increased blood pressure, a high blood sugar level, excess body fat around the waist and abnormal cholesterol levels — that occur together, increasing your risk of heart disease, stroke and diabetes.

Having just one of these conditions doesn’t mean you have metabolic syndrome. However, any of these conditions increase your risk of serious disease. If more than one of these conditions occur in combination, your risk is even greater.

If you have metabolic syndrome or any of the components of metabolic syndrome, aggressive lifestyle changes can delay or even prevent the development of serious health problems.

For ME, it was the High Blood Pressure, Pre diabetes and weight around my middle. The weight around my middle would Never decrease when I lost weight with other diet programs, I chalked it up to the fact I did not exercise enough, so adding exercise it was still there. So I gave myself the excuse of being over 40 was the culprit. Little did I know it was the way my body was now taking all the Carbs I was eating and turning them into Unhealthy Fat. 

So whats going on now with my waistline and my weight, well. I’m not loosing Muscle but I am loosing the Fat around my middle, example, well when I first started my Wii (love my Wii Fit) said my BMI was 29.4 that was back in May. Today its the 3rd. of September and my Happy little Wii Helper said my BMI is now 24.1 ,A healthy BMI for a person of my size is 22. So guys, I think this is good. I’m 11 lbs away from my goal and 2 away from Healthy BMI.

It may not happen overnight, But it will happen, just the simple, easy way of just changing what you Eat.

So Why LCHF, Why Not!

Low Carb BlueBerry Walnut Mini Cubcakes

Yes you can Have a Muffin…At least one or two. These fabulous little Mini Cupcakes will make you think there is NO WAY these are Low Carb and good for you! But guess what guys…THEY ARE!

We are going to start with the Batter for the LCHF Cream Cheese Pound Cake from my friends Group: Fittoservegroup.com

Here is that recipe: LCHF Cream Cheese Pound Cake by fittoservegroup.com

1 ¼ c almond flour

¾ c of swerve or other sugar substitute

1 tsp baking powder

¼ tsp of salt

4 eggs

3 ½ oz cream cheese

4 tbs softened butter

1 tsp of vanilla

In a mixing bowl mix with an electric mixer on high beat the butter with the sugar substitute until well mixed then add the cream cheese next add the eggs one at a time. Add the vanilla. Next add all the dry ingredients until well combined.

When that is completed lets get ready to add the Muffin Stuffin’

Preheat oven to 350 degree

1 cup Chopped Walnuts (I use a mini food processor you’ll want them Fine chopped.)

1 Cup Frozen Blueberry or fresh is fine also. You’ll need to chop these as well, semi smalls.

Get your Mini Muffins ready or use Big up to you 🙂

Chop Walnuts

Add to LCHF Cream Cheese Pound Cake mix. Take mixer out and use large Spoon to mix in!

Next Blend Frozen Berrys  (or your Fresh. NOTE: DO NOT BLEND Fresh Berrys just chop with knife.

Make sure mix is Blended well, and then Fill  Mini Cupcakes 🙂

Now Lets BAKE!!! 

These cook pretty fast so keep an Eye on them, about 15 min. When you insert small knife or toothpick it should come out clean. Let cool and Enjoy!
