Low Carb Crock Pot Chicken Fajita Soup

I hope everyone had a Wonderful Holiday! I know my family and I did. 2021 will be a wonderful year I just know it!

                             Low Carb Crock Pot Chicken Fajita Soup

Its getting chilly hear in the South this is a fantastic recipe to warm your soul, I found the original recipe on Peace, Love and Low Carb I tweaked alittle for my family’s taste. But I would like to thank Peace-Love and Low Carb for this recipe. 🙂

Ingredients

1 Crock Pot family Size (If you don’t have a Crock you can make on Stove top).

1 pack skinless Chicken Breast about 1 to 1 1/2 lbs 

2 Cups Chicken Stock lower sodium

1 Cup beef Stock lower sodium

14.5 can organic diced tomatoes 

2 Cups sliced Mushrooms

2 Cloves of chopped diced Garlic. (I had to use my backup minced, I was actually out of fresh 😦 oh no!)

1 Onion diced

1 Green Bell Pepper Chopped Diced

1 Orange Pepper Chopped Diced

1 Red Bell Pepper chopped Diced

4 Heaping Tablespoons of Fajita or Taco Seasoning

1 Tablespoon Garlic Salt

1 Tablespoon Fresh Ground Pepper

Salt to taste. If needed.

Lets Cook!

First lets Wash and Trim our Chicken Breast. Set Crock pot on 6 hr. low setting. Lets get our Vegis. washed and Diced. Place Chicken Breast in Crock pot and Cover with Diced Tomatoes.

Now lets add the remaining ingredients.

20151029_112441 Chicken Broth and Garlic Salt and Ground Back Pepper stir in Broth for full flavor.

Your Crock pot should look like This :

Put lid on and cook for about 5 hrs. then REMOVE chicken and Shred. Works better for me Removing Chicken but if you want you can do it in Crock.

Return to Crock and Cook for an Additional Hour.

The Kitchen Remodel

Well over the past two months I have been unable to try new recipes and post terrific Low Carb Dishes. After the New Year My husband and I decided to do the dreaded, KITCHEN REMODEL. I am BACK! Kitchen is almost finished and New recipes are on the way, I PROMISE! 

Anyone that has decided to do a major project like this WOW! My Chiropractor has got a lot of business from me in the last month.

Im working on some new Projects as far as Low Carb/High Fat. The main thing Im focusing on is easy quick meals and snacks that you can fix for a busy life. Reason: my 19 year old needs to drop a few pounds of Belly Fat and he came to me for easy quick ideas he could do for his hectic College life.

Im hoping this idea appeals to some of you all too 🙂

I will still be working on the Family meals and one pot dishes also.

Also, being Semi Off my eating plan due to limited  kitchen access I have felt AWFUL, Ive gained back 5 pounds and  the Symptoms of Metabolic Syndrome have been resurfacing, uuugggg! This is because of the Processed foods I have had to deal with, no home-cooked freshness.  But for the past 3 days IM COOKING! I have started to feel better and get the energy back.

Im going to be away for the next couple of weeks due to the Holidays, Family and Friends. I will be back next year with a New Look and New recipes.

I want everyone to have a Fantastic Holiday and stay STRONG. Those of you that have lost weight and are still loosing and those of you who are just begging. Food for the Holidays is all around us, but hopefully you guys have learned what to stay away from. Have that Holiday Cookie but just one! Have that wonderful Holiday Cocktail. Low Carb Pimento Cheese Sweet Pepper Boats

I know Right! These little guys are so yummy, my favorite is the Fall colors of the pepper. So I decided to take one of my favorite little spreads and stick them in a Pepper Boat, I had no idea how this was going to turn out but Walla! Sure is good, these little guys make a great party snack for those upcoming events we are all about to encounter in the next few months. I don’t know about you guys I love to entertain and stay Healthy too. So try my little Boats, I think you;ll find them quite tasty. 

What you’ll Need

About 10 to 12 Sweet Peppers

Olive Oil

8 oz. Cheese (I used 6 oz. Cheddar and 2 oz. White Cheddar, But you can use what you like, just No Bag! Shred yourself!!)

1 oz Gouda (Optional, I just love Gouda!)

4 oz Jar Chopped Pimento 

1/4 Cup Plain Greek Yogurt ( I don’t like Mayo so I use Greek, if you like Mayo go ahead and use that.)

1/8 Cheyenne Pepper Spice

1 teaspoon Lemon Juice

Salt and Pepper

 

Lets Get Started!

Pre heat oven to 400 (This is for roasting our Pepers, if you want them Raw thats fine too 🙂  just skip this step and proceed.

Line a cookie sheet with Parchment paper. and Slice Peppers and take a small knife and clean seeds.

Lay Peppers on Sheet with shell pointed up.

Drizzle with Olive Oil (Top was Off my bottle too much came out, dont do that, just Drizzle!)

Place inside oven, until they start to turn slightly toasted, not too long no more than 10 to 12 min.

Remove from oven and put aside on separate sheet of parchment paper to cool, use your tongs and GENTLY lay them on paper.

While Peppers are cooling lets make out Pimento Stuffing .

First make sure you have your Cheeses Grated.

Drain your Pimentos.

Grab a Small mixing Bowl and lets start Combining our Incidents.

Add Cheese (Cheddar’s only, if your using the Gouda SAVE for later). Add Cheyenne Pepper. And the Pimentos.

Next Yogurt (or Mayo)and then the Lemon Juice.

Now lets Mix well with a Spoon. Salt and Pepper to taste.

Once that’s done lets check to see if our Peppers are cool to handle, if so, Pick up Pepper and start to stuff, its alittle trick you’ll have to hold in one hand and stuff with small spoon, sprinkle Gouda on top, YUM!

Cover with Saran wrap and Chill in Fridge for about 2 hrs.

Low Carb Sweet Potato Casserole

Fall is Coming, even here in the South we can feel a change in the air. Its actually raining and quite humid out there, but you can tell. One of my favorite fall desserts is Sweet Potato casserole, even as a side dish during the fall Holidays this is one of my favorites. I had to do a little research to get this Fall Favorite to fit into my new way of Loving My Food. I believe I’ve accomplished just that. I hope you guys will enjoy this Wonderful little Dessert/ Side Dish. Please keep in mind this is NOT Induction friendly if your on Atkins or just starting out to Loose Weight. Please limit to Portion size of about 1/2 cup. I hope you guys will enjoy this Wonderful little Dessert/ Side Dish.  🙂

What you’ll need

4 Cup Peeled, Diced and Boiled Sweet Potatos

2 Tablespoons Sugar Substitute

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1/2 Teaspoon Salt

2 Tablespoon Imitation Maple Flavoring

3 Tablespoons Coconut Oil

4 Tablespoons Real Butter Unsalted

1/4 Cup Almond Milk Unsweetened

The Crumble Topping

1 Cup Chopped Pecans or Walnuts

2 Tablespoons Imitation Maple Flavoring

 3 Tablespoons Almond Flour

3 Tablespoons Melted Real Butter Unsalted

 

OK! Lets Get Started!

First lets Peel and Dice our Sweet Potatoes and get them Boiling.

Once these are Diced, rinse well and Boil in water until Fork Tender. 

While that is cooking, preheat oven to 350. 

Lets Get the Topping Started.

Blend your Pecans to Crumble stage. Place in Small bowl the Add Almond Flour, Add Imitation Flavoring to soften butter and pour over mixture and mix well. And just set aside until the end.

Next lets Drain those Fork Tender Sweet Potato Cubes. Then Place in Mixing bowl and Mix.

Mix half way then add your ingredients one by one and keep mixing, until mixture is mixed very well! 

Ready your Pan!

20150928_164242This is a typical Loaf pan about 9 + 5. Greased with Butter.

Pour Ingredients in your Prepared Pan and Add your topping.

Place in Oven and Cook for about 30 minutes.

Let Cool and Enjoy! 

I love this dish Warm or Cold. I sometimes leave it in the fridge overnight and slice into bar size, the perfect portion.

Why LCHF?

After all the Diets and Weight Loss programs I have tried, and failed. Not from not loosing weight, but failed as to not seeing the full effects of Better Health and Feeling of Success in weight loss. All ended in Gaining back All or Part of my weight back and giving up.

But Do to the Health issues I had, I needed to find something that was RIGHT, so what was it. I researched Low Carb and from all the testimonials I’ve read and the results I have heard from the Low Carb lifestyle, I thought I would give this one a fare chance as well.

As I have told you before in previous Post, I was in poor Health, But the big picture was much worse than previously described. Symptoms:

*Fatigue

*Muscle Aches

*Female issues (Hormonal, and Fibroid s)

*Arthritis

*High Blood Pressure

*Pre-Diabetic

*Not sleeping through the night

*Severe Acid Re-flux

 

Going to the Doctor I was diagnosed with Onset  of diabetes, Fibromyalgia, beginning of Rheumatoid Arthritis, One Doctor even told me I may have Lupus. Lupus, OMG I was falling apart. The list goes on and on, not to mention they tested my Thyroid every time I had an issue. So I tried to take the medication I ws prescibed, tried to do what I was told and still No Relief. 

That being said, I decided to just take one step at a time and start with helping the Pre Diabetes to STOP. So I took it upon myself to change my eating, Low Carb. I had no Idea, that after starting this program in May of this year that I would be were I am now. Today, I have No symptoms of any of the above problems. I do still take my Blood Pressure medications, that my friends is alot better as well. hopefully in a few more months I can resolve that as well. 

I really believe being a YO YO dieter is the cause of alot of my formal Health issues with my Metabolism. This lead me to research Metabolic Syndrome.

Metabolic Syndrome

Many people do not realize that they are insulin deficient and may have Metabolic Syndrome, changing your diet and sticking to it may change everything, What is Metabolic Syndrome, well the definition is simple:

Metabolic syndrome is a cluster of conditions — increased blood pressure, a high blood sugar level, excess body fat around the waist and abnormal cholesterol levels — that occur together, increasing your risk of heart disease, stroke and diabetes.

Having just one of these conditions doesn’t mean you have metabolic syndrome. However, any of these conditions increase your risk of serious disease. If more than one of these conditions occur in combination, your risk is even greater.

If you have metabolic syndrome or any of the components of metabolic syndrome, aggressive lifestyle changes can delay or even prevent the development of serious health problems.

For ME, it was the High Blood Pressure, Pre diabetes and weight around my middle. The weight around my middle would Never decrease when I lost weight with other diet programs, I chalked it up to the fact I did not exercise enough, so adding exercise it was still there. So I gave myself the excuse of being over 40 was the culprit. Little did I know it was the way my body was now taking all the Carbs I was eating and turning them into Unhealthy Fat. 

So whats going on now with my waistline and my weight, well. I’m not loosing Muscle but I am loosing the Fat around my middle, example, well when I first started my Wii (love my Wii Fit) said my BMI was 29.4 that was back in May. Today its the 3rd. of September and my Happy little Wii Helper said my BMI is now 24.1 ,A healthy BMI for a person of my size is 22. So guys, I think this is good. I’m 11 lbs away from my goal and 2 away from Healthy BMI.

It may not happen overnight, But it will happen, just the simple, easy way of just changing what you Eat.

So Why LCHF, Why Not!

Low Carb BlueBerry Walnut Mini Cubcakes

Yes you can Have a Muffin…At least one or two. These fabulous little Mini Cupcakes will make you think there is NO WAY these are Low Carb and good for you! But guess what guys…THEY ARE!

We are going to start with the Batter for the LCHF Cream Cheese Pound Cake from my friends Group: Fittoservegroup.com

Here is that recipe: LCHF Cream Cheese Pound Cake by fittoservegroup.com

1 ¼ c almond flour

¾ c of swerve or other sugar substitute

1 tsp baking powder

¼ tsp of salt

4 eggs

3 ½ oz cream cheese

4 tbs softened butter

1 tsp of vanilla

In a mixing bowl mix with an electric mixer on high beat the butter with the sugar substitute until well mixed then add the cream cheese next add the eggs one at a time. Add the vanilla. Next add all the dry ingredients until well combined.

When that is completed lets get ready to add the Muffin Stuffin’

Preheat oven to 350 degree

1 cup Chopped Walnuts (I use a mini food processor you’ll want them Fine chopped.)

1 Cup Frozen Blueberry or fresh is fine also. You’ll need to chop these as well, semi smalls.

Get your Mini Muffins ready or use Big up to you 🙂

Add to LCHF Cream Cheese Pound Cake mix. Take mixer out and use large Spoon to mix in!

Next Blend Frozen Berrys  (or your Fresh. NOTE: DO NOT BLEND Fresh Berrys just chop with knife.

Make sure mix is Blended well, and then Fill  Mini Cupcakes 🙂

Now Lets BAKE!!! 

These cook pretty fast so keep an Eye on them, about 15 min. When you insert small knife or toothpick it should come out clean. Let cool and Enjoy!

Believe in YOURSELF!

I’ve always believed in KARMA, whatever you do comes back to you, e.g. if you do something good, something good will happen to you, and vice versa.

So Success, what is MY definition, well I believe , accomplishment of an aim or purpose. Did I succeed at Success, well you decide.

When I was a child, I thought there was MORE. That life held so many option for me  it was just a matter of getting to them. As I got older, LIFE got to me first.

I dropped out of High School and was married at 18, and a baby on the way by 21. Still through all this in my head were the Dreams of Making a Difference. By that I just wanted to make my MARK do something special, help someone,Find something no one else has yet to discover.

I collected travel books from the Travel company down the road, thought maybe I could Travel to Egypt, take some unbelievable photos and through them ,make someone smile at the photo and encourage them to find their adventure. 

The need for wanting to help and touch a life and encourage was a need I had, but I was not very educated, a housewife and mother. 

When I reached my 30’s (36 to be exact) I had a second child. I decided It was time I try to find something to fulfill the urge to make a difference. I went back to school received my GED and Started College, my career was to be a EMT/Paramedic. This was my chance to make a mark and to ease the feeling of a life without purpose.

I completed School, but before I could take my final Testing I was having to go through a very difficult life change, Divorce. I decided the best thing for myself and my children was to get a Job and work towards my state testing while I get life straight again. Not hard to guess what happened, I never made it to my Testing. Finding time to raise my two kids, study, work and do Clinical s was impossible. 

I remarried at 40 and had another child, my beautiful baby girl. My new husband was very supportive and together we decided to open our own business, a pet shoppe. Our business did well and I touched so many lives with that career, I was very happy. Unfortunately we had to close our doors. Since then, I’ve been trying desperately to find my niche again. And I hope I did ♥

So did I Succeed in Success, I think so. But I still would love to do more 🙂

I’m hoping that through this Website (blog) I will be able to help someone, good people, to find good Health and a Better life. If not for several maybe just one.

Low Carb Grilled Bacon Cheese Sandwich

OH YES! This is a Wonderful quick, easy recipe and so tasty. With this Simple Bread, Bun recipe you can use for the Grilled Cheese or Hamburger or Even a Toasted Reuben YUMMM!

What you’ll Need

2 Eggs

2 Tablespoons of Water

2 Tablespoons Coconut Flour

1/2 Teaspoon Baking Powder

Microwave safe dish, (I used a plastic rubber made sandwich container, worked really well!)

For your Grilled Sandwich

1  1/2 Tablespoons Butter (I used Unsalted, But you don’t have too)

Cheese, Bacon or anything you want to Grill.

Here’s What We Do

In a small mixing bowl add Eggs and Water then Whisk well.

When you mix the Eggs add other ingredients  (Coconut powder and Baking Powder).

When Ingredients are mixed well with Whisk pour into your Microwave container.

Place into Microwave for approximately 2 minutes.

Next place cooling paper or board down and flip container upside down and flip hot bread onto paper or board to COOL.

(should come out really easy).

LET COOL until you can place hand ontop ! Then Slice in half.

Next ADD Butter to pan on Med high and melt slightly DO NOT BURN BUTTER before adding Bread.

Meat and Poultry

Any type or cut of meat is fine. For the best health, choose grass-fed or organic meats, avoiding antibiotic, pesticide and grain residues.

  • Chicken (whole or parts)
  • Beef steaks 
  • Bacon No Added  Sugar, Try to find the All Natural No Preservatives. 
  • Ham  No Sugar Cured, make your own Low Carb Glaze
  • Sausage (Try to stay All Natural, fresh processed Sausage can be loaded with Sugars)
  • Pork loin
  • Pork chops
  • Pork steaks
  • Pork or beef ribs
  • Beef or pork roasts
  • Ground beef
  • Ground turkey

Deli Meat

Good in a pinch and better than higher carb alternatives.

  • Cold cuts such as turkey breast and pastrami (Check for added sugars.)
  • Pepperoni sticks or slices
  • Salami and bologna
  • Prosciutto

Seafood

Any type of seafood is fine- except imitation crab meat. Make sure to check the labels if you’re buying any frozen varieties.

Omega 3 fat levels are higher in wild caught seafood.

  • Fresh or frozen, easy-to-peel shrimp
  • Fresh or frozen fish
  • Tuna in oil or water
  • Fresh or canned salmon
  • Fresh or frozen scallops
  • Crab

Dairy Products 

Do Not go for the LOW FAT, Full Fat is best.

  • Eggs
  • Heavy cream
  • Sour cream
  • Cream cheese
  • Butter
  • Cheese (Hard cheeses such as cheddar and Parmesan.)
  • Cheese (Soft cheeses such Muenster and Farmer’s.)
  • Greek Yogurt (Choose plain, full fat and aim for less than 7 net carbs per serving.)

Low Carb Vegetables

Vegetables are a main event on any low carb foods list. Low carb veggies replace sugary side dishes and add incredible variety to meals.

  • Bell peppers
  • Broccoli
  • Cucumbers
  • Cabbage
  • Cauliflower
  • Lettuce (Large leaves act as the “bread” for sandwiches.)
  • Leafy green vegetables such as spinach and kale
  • Onions and garlic (for flavorful cooking)
  • Sprouts for salads
  • Summer squash such as zucchini

Fruits

Fruits are an optional item on your low carb grocery list. They can be added once your weight and health are stable.

Some people can handle the sugar in fruit and still be healthy and slim, others can’t.

Not sure which fruits are low carb enough? Here are 43 low carb fruits with 1 to 10 net carbs per serving to enjoy.

  • Choose fresh, local fruit in season and stick to berries which are lower in sugar.
  • Eat fresh fruit with a fat (peanut butter, whipped cream, cheese). It slows the blood sugar spike.
  • Try avocados: A great snack with lemon juice or balsamic, or make guacamole for dipping low carb veggies.

Nuts and Seeds (I do Caution you Guys on The Nuts, they are great, but DO-NOT overdo!)

  • Nuts: Almonds, hazelnuts, pecans, walnuts, and especially macadamia nuts (Nuts last longer if you freeze them.)
  • Seeds: Sunflower, pumpkin and sesame seeds

Random Snacks

  • Pork rinds (Crushed, these are a good substitute for bread crumbs.)
  • Beef jerky or beef sticks
